My head is spinning between the insanity of my full-time job right now (hello big convention in two weeks!) and my attempts to engage my LuLaRoe customers with sales of all my fabulous new spring inventory that is coming in (hello fun colors and florals!). Plus, sadly, I promised Teacher Man I would get to our taxes over the weekend (hello way-to-ruin-a-perfectly-good-Saturday!). 

But what didn’t stress me out was supper tonight.

It was easy peasy. So easy, in fact, that it would be kinda embarrassing to share a recipe. I’ll just show you a photo and tell you what I did instead. 😉

Turkey Tuesday: Easy Peasy Turkey via MyOtherMoreExcitingSelf.com

Simply put:

  1. Take a bag of Market Pantry frozen turkey meatballs from Target out of the freezer and heat them up according to the directions. (I chose the stovetop method.)
  2. Meanwhile, cook some rigatoni pasta al dente and drain.
  3. Once meatballs are heated through, add a jar of spaghetti sauce (your choice!) and heat for 3-4 minutes.
  4. Spray a deep dish casserole (or 9×13 pan) with cooking spray.
  5. Layer some of the saucy meatballs on the bottom.
  6. Top with slices of turkey pepperoni.
  7. Add the rigatoni.
  8. Top with Mozzarella cheese (about 1 cup)
  9. Top with the rest of the saucy meatball mixture.
  10. Finish with another cup of Mozzarella and some Parmesan (about 1/2 cup).
  11. Bake for 20 minutes.

Voila! Baked rigatoni with turkey meatballs for very little effort and a lot of reward.

The perfect weeknight meal when I’m scrambling to do 1200 jobs and still squeeze time in for a workout. (Which I did not tonight, by the way. I wrote a blog post instead.)

Easy peasy? Yes!
